San Ignacio and Jaen are provinces located up north in the department of Cajamarca and are well known for pristine and beautiful natural forests and being the main capital of Peruvian coffee. In the past years this region has seen a lot of growth in part through the production of coffee bringing prosperity and development. Both San Ignacio and Jaen have become leaders in tourism and environmentally friendly practices.
Most of the producers of this area come from Cajamarca Sierra and Piura. The farms tend to show great biodiversity of natural species, clay soils and constant rain. These characteristics are because of the influence of the Huamantanga Forest and National Sanctuary of Tabaconas – Namballe, which create ideal microclimatic conditions to produce specialty coffee in the area.
El Guayacan is a magnificent and majestic tree with yellow flowering that usually embellishes the coffee landscapes of northern Cajamarca, hence the name of this coffee. These trees are seen in some farms providing shade and protecting coffee trees.
